Many Mushroom Soup

Who loves mushrooms? This girl. It’s funny how your tastebuds change as you get older because I remember as a kid picking out the mushrooms and onions in everything and now I can’t get enough of them! This mushroom soup recipe is super simple as it only has a few main ingredients (most of which are the different kinds of mushrooms!) and is packed full of flavor. Ingredients:
2 tbsp olive oil
1 medium onion, diced
Mixed Mushroom Selection: Use all of them like me or just pick your favorites! See what’s fresh and seasonal where you live. Each type of mushroom has a different flavor.
cremini mushrooms
shiitake mushrooms
portabella mushrooms
button mushrooms
1 medium clove garlic, minced
4 cups vegetable broth
Salt/pepper to taste
Cayenne pepper to taste
Optional: dried oregano, dried basil

First you are going to begin heating your olive oil on medium-high heat in a large pot or dutch oven. Add your garlic and onions first and cook until tender, about 1-2 minutes. Next, add in your mixed mushrooms. Uncooked mushrooms look like a LOT but don’t worry because they’ll cook down and get smaller. If you need to add the mushrooms a little at a time. Continue stirring and fold the mushrooms in with the onion and garlic. Continue this until all mushrooms are cooked down and look like this:


At this point I recommend adding your spices such as salt, pepper, and cayenne (if you’re using it- we do!). Adding the spices before the broth will help bring out the flavors and infuse the mushrooms more than adding it later.


Mushrooms will naturally give off liquid. Continue stirring until this liquid becomes almost like a glaze, about 5 minutes. Add in the vegetable broth and bring to a simmer for about 15-20 minutes.

Ladle into a bowl and serve hot and feel free to add some french bread to soak up that brothy goodness :)  We actually just discovered that grating a little parmesan cheese and garnishing your soup adds a little more salt (from the cheese) and pairs well with the savory broth. Keep in mind that adding cheese to anything will add some calories (or points if you’re on WW) but it sure tastes good!

  2. I think that my Mom would absolutely love this soup!!! I'm not the biggest fan of mushrooms, but I think it's one that I'd be willing to try. :)

  4. Thank you!!! Some of my favorite soups and dishes contain mushrooms, but I've just never made anything that had mushrooms as the main ingredient! You may be responsible for helping me to branch out and go for it! :)
