Yummy Quinoa Enchilada Bake

Marrying a man from Texas and overall just enjoying Mexican cuisine, it is no wonder that this enchilada dish came strolling into our kitchen. Earlier in the week I was looking for more recipes to try and came across this yummy enchilada recipe that incorporates quinoa instead of chicken. Amused, I printed it off and cooked it for the first time last night. Needless to say, it turned out fantastic and quickly became one of our favorite Mexican dishes!

Meatless Monday Lunch Recipes


Happy Monday everyone! Today marks the beginning of my first week off from school for our Christmas break. We head back after the new year but I look forward to a bit of relaxation and the comfort of my PJs...unless I find myself in a situation where it's necessary to wear actual clothes ;)

DIY Christmas Card Wall Display


It’s officially the time of giving and receiving holiday and Christmas cards. I absolutely love spending the intricate time of crafting my holiday cards but alas this year it was one expense we cut due to trying to save (boo!). I mean, these cards come out to be at least $100! (So, sorry in advance to all my family and friends who will not be receiving a card this year!)

However, receiving cards is always fun because I love using them as decoration throughout the house. Today I wanted to share with you some fun ideas you can use in your home to display your lovely Christmas cards! And the best part is, you don’t have to spend a fortune on pre-made displays!

Christmas Wish List 2014

This year has been a big one: we got married, moved across the country to CA, and are still getting settled financially. Therefore we opted for no presents this year but instead got our matching tattoos, which we’ve had planned for a while now. We’re so happy with our results and excited to share this together. I don’t know, there’s no other feeling than getting inked with your love and sharing that bond together :)

Holiday Date Night Ideas 2014


Date Nights are extremely important in our family - especially before the chaos of raising children in the future. Making the time to spend with your spouse can get pretty difficult with work, school, children (for those who have them), etc., and life just somehow seems to get in the way. I mean, one minute it’s Monday then before you know it a month has passed. Slowing down to appreciate one another and spend quality ‘alone’ time with each other as adults  is fundamental in any relationship.

With that being said, the holidays provide many opportunities to grow in our relationships and they’re just, as simply put, fun. I’ve made a list and wanted to share some of the date night ideas Philip and I have come up with to do this holiday season and I hope you can find some fun ideas to share with your family. What makes it even more special is that this is our first, yes first, Christmas as a married couple. Eeek!

A few nights ago I was so excited to see that my lovely Stitch Fix box had arrived for December and I could’t wait to see what my stylist found for me (see original post here)! Inside I found yet another vest that I’ve had my little eyes on for a while and couldn’t wait to explore all the different ways I could play with it! Green isn’t my go-to color but I fell in love with this dark evergreen shade, which is great for fall/winter and is versatile.

It sure has been a while since I’ve been able to post! However it was for a good reason and that is the hubs and I traveled to Vail, Colorado for a friend’s wedding. It was a beautiful ceremony and I loved getting to see all of my friends from back home. Nothing like getting to spend the weekend with your favorite people! Also, I’ve never been to CO before and was very much looking forward to it. I told myself to soak in the winter as much as possible over my three day stay and it was great. As much as I loved the cold, snowy mountainous backdrop, I have to say I’m happy to be home in sunny CA.

The Roles of Men and Women in Marriage


Today as I was perusing Facebook and stumbled across an article that peaked my interest. It was titled: 8 Things Women Just Don’t Do Anymore (That They Should!) [check out the original article here]. It goes on to discuss the author’s top eight things that women should do in relationships, specifically in how they treat their man, but simply have gone by the wayside in our modern times. Here’s what makes her list:

After reading through her explanations of each of her top eight,  it was interesting to see her points and infer the values in which she places on women’s roles in their relationships with men.
